TERROIR : Mediterranean climate, vineyard in the foothills of the Massif Central. Clay and limestone soil, white marl.
TRAINING THE VINES : Goblet pruning
PRODUCTION : 1800 bottles/ha
VINIFICATION : Direct pressing, cold filtration, Pressurage direct, temperature-controlled fermentation in tanks.
ELEVAGE : 14 months on lees in full tanks with regular stirring, no malolactic fermentation.
OF INTEREST : The young mourvèdre vines are planted on limestone clay slopes just below a wood, protected from the wind and east facing. The grapes mature slowly and are harvested in mid October. Wines from these vines will become richer as the vines mature over the next 10 years or so.
