ELEVAGE: At the end of fermentation on lees. Without batonnage. Bottled in August.
OF INTEREST: Michel and Jeff at the beginning of harvest have noticed the swallows gathered while they were discussing this cuvee, on the Roquebrun bridge. This is why the cuvée took this name.
