TERROIR: Mediterranean climate, vineyard in the foothills of the Massif Central. Clay and limestone soil, white marl.
TRAINING THE VINE: Grenache Goblet trained
PRODUCTION: 5500 bottles/ha
VINIFICATION: Grapes destemmed and partially pressed. Temperature controlled fermentation, regular punching down of the cap, gentle extraction.
ELEVAGE: On lees in full tanks with regular stirring, malolactic fermentation. Racking after malolactic fermentation retaining the fine lees. No sulphur dioxide.
OF INTEREST: Sans pareil is another name grenache. This wine is produced from young vines grown on limestone clay at Causse et Veyran. It is a very juicy and fruity wine. Soon (in another 40 years!) it will attain the minerality Comme à Cayenne.
